Protein Waffles for Two

I want to present an important topic and possible spin-off from this blog: Eating Together or Feeding Therapy for 2.

Today, I made a  protein waffle and a scrambled egg for breakfast. Deliciously low sugar - I only drizzled some honey on top as we are out of peanut butter- filling, good grains for breastfeeding {Hello sprouted oat flour}.  Now my daughter is currently ONLY 3 months and is certainly not ready to be taste testing any of my food, however, I have been noticing how observant she is to my every move and my goodness were her hands in her mouth, drooling and big eyes watching mommy as I was preparing breakfast.

This gave me a great idea to set the BUMBO at face level on the table to practice a different position while engaging with baby during meal time.  Feeding practice starts way before putting baby in the high chair and offering tastes of puree: It starts with many positive interactions, smells from food and observing parents. During the feed we laughed, smiled, cooed together and I also let her experience a raw carrot {another post}.

*Benefits - different position from lying on back, face-to-face time and bonding,
** Bumbo is great for small amounts of time, but not to be used to TEACH baby how to sit or for extended 'baby holding' activities.

Recipe adapted from: http://cherierunsthis.com/how-to-meal-prep-like-a-champ/

1/2 cup oat flour {can be exchanged for almond or cashew meal}
1/2 cup cottage cheese
2 eggs
1 tsp vanilla
1/2 tsp cinnamon
1/2 tsp baking powder
1/4 tsp himalayan or sea salt

Preheat Waffle iron {or pancake griddle or skillet}
Blend together in food processor or blender*
Pour batter into waffle iron {do not rely on typical amount of time} - time for 90secs to 2 minutes
--> End result should be crispy on the outside, fluffy on the inside

*If using whole oats - blend first before adding other ingredients to get a nice oat flour consistency
** GF, paleo possible,

My favorite aspect of this recipe is that it is not sweet - no sugar added - which means you can have a more savory waffle or you can add the natural sugar later {The options are endless}

1. Add homemade whipped cream {coconut or cream-based} and fresh fruit for a healthier dessert
2. Add natural, no sugar added peanut butter for an extra healthful fat and protein addition
3. Top with natural maple syrup for weekend brunch or special occasion
4. Add  shredded cheese and/or herbs for a more savory option {dill, thyme, rosemary}

My second favorite aspect of this recipe is that it is a great food for both a mom or dad and their baby to eat together - great for the waist-line and a great consistency for a baby transitioning from baby foods to more table foods.

Eat Together! Cheers
